Group Captain Henderson was in the RAF during the war and would have worn his mess jacket on formal occasions, i.e. when dining in the Officers' Mess, etc. In the RAF, the mess jacket is sky blue ('celeste' in heraldry). The formations of the dance represent the design of the jacket. The tune is Squadron Leader Douglas Henderson by Nan Main.
